Decadent Chocolate Mousse That Will Melt Your Heart


Ingredients

Scale
  • 2 cups Heavy cream (cold, whip to soft peaks)
  • 8 ounces Bittersweet chocolate (finely chopped)
  • 2 tablespoons Unsalted butter (cubed)
  • 1/4 cup Brewed espresso (or very strong coffee)
  • 4 large Large eggs (separated)
  • 1/4 cup Sugar
  • 1 cup Raspberries (fresh)
  • 1 cup Whipped cream (for topping)

Instructions

  1. In a large mixing bowl, whip the cold heavy cream until soft peaks form, then place it in the refrigerator to chill.
  2. Combine the chopped bittersweet chocolate, cubed butter, and brewed espresso in the top of a double boiler over simmering water. Stir frequently until the mixture is smooth and glossy.
  3. Remove the chocolate mixture from heat and allow it to cool until it feels just warm to the touch.
  4. In another bowl, whip the egg whites until they are foamy, then sprinkle in the sugar. Continue whipping until stiff peaks form.
  5. Once the chocolate mixture has cooled, stir in the separated egg yolks until everything is well combined.
  6. Gently fold in one-third of the whipped cream to lighten the chocolate, then fold in half of the whipped egg whites. Carefully fold in the remaining egg whites and then the whipped cream until just combined.
  7. Spoon or pipe the mousse into individual serving dishes and chill in the refrigerator for at least 8 hours, or as long as 24 hours, so it sets perfectly.
