Instructions

  1. In a medium, heatproof bowl, whisk together the egg yolks and granulated sugar until well combined.
  2. Whisk in the fresh lemon juice until smooth.
  3. Set the bowl over a saucepan of simmering water (double boiler method), ensuring the bottom of the bowl does not touch the water.
  4. Cook, whisking constantly, until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes.
  5. Remove the bowl from the heat.
  6. Gradually whisk in the cubed butter, one piece at a time, until fully melted and incorporated.
  7. Strain the lemon curd through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
  8. Press plastic wrap directly onto the surface of the lemon curd to prevent a skin from forming.
  9. Chill in the refrigerator for at least 2 hours, or until firm. This easy lemon curd is now ready to use.
