Instructions
- In a medium, heatproof bowl, whisk together the egg yolks and granulated sugar until well combined.
- Whisk in the fresh lemon juice until smooth.
- Set the bowl over a saucepan of simmering water (double boiler method), ensuring the bottom of the bowl does not touch the water.
- Cook, whisking constantly, until the mixture thickens enough to coat the back of a spoon, about 8-10 minutes.
- Remove the bowl from the heat.
- Gradually whisk in the cubed butter, one piece at a time, until fully melted and incorporated.
- Strain the lemon curd through a fine-mesh sieve into a clean bowl to remove any cooked egg bits.
- Press plastic wrap directly onto the surface of the lemon curd to prevent a skin from forming.
- Chill in the refrigerator for at least 2 hours, or until firm. This easy lemon curd is now ready to use.
