  • 2 tablespoons Extra-Virgin Olive Oil
  • 1 teaspoon Oregano
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper

Instructions

  1. Start by slicing the large cucumbers in half lengthwise. Using a melon baller or small spoon, scoop out the seeds to create little cups. Keep the walls thick for a sturdy base!
  2. In a mixing bowl, combine quartered cherry tomatoes, chopped kalamata olives, crumbled feta, minced garlic, chopped dill, lemon juice, olive oil, oregano, kosher salt, and freshly ground black pepper. Mix thoroughly until everything is well combined.
