Iced Strawberry Brownies are a delightful dessert, perfect for special occasions or a sweet treat. These brownies are easy to make using strawberry cake mix and are topped with a vibrant pink glaze.

- 1 (15.25 ounce) box strawberry cake mix
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2–3 tablespoons milk or cream
- 1/2 teaspoon strawberry extract (optional)
- Pink food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, combine the strawberry cake mix, flour, and cocoa powder. Whisk until well combined.
- In a separate medium bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
- Spread the brownie batter evenly into the prepared baking pan.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Do not overbake.
- Let the strawberry brownies cool completely in the pan on a wire rack.
- While the brownies cool, prepare the strawberry icing. In a medium bowl, whisk together the powdered sugar, milk (or cream), and strawberry extract (if using) until smooth. Add food coloring if you want a brighter pink glaze.
- Once the brownies are completely cool, pour the pink icing over the top and spread evenly with an offset spatula.
- Let the icing set for at least 30 minutes before cutting the iced strawberry brownies into squares.
Notes
- For fudgier brownies, reduce the baking time by a couple of minutes.
- Ensure the brownies are completely cool before icing to prevent the glaze from melting.
- Store iced strawberry brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
