Description

  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 23 tablespoons milk or cream
  • 1/2 teaspoon strawberry extract (optional)
  • Pink food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a large bowl, combine the strawberry cake mix, flour, and cocoa powder. Whisk until well combined.
  3. In a separate medium bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
  5. Spread the brownie batter evenly into the prepared baking pan.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Do not overbake.
  7. Let the strawberry brownies cool completely in the pan on a wire rack.
  8. While the brownies cool, prepare the strawberry icing. In a medium bowl, whisk together the powdered sugar, milk (or cream), and strawberry extract (if using) until smooth. Add food coloring if you want a brighter pink glaze.
  9. Once the brownies are completely cool, pour the pink icing over the top and spread evenly with an offset spatula.
  10. Let the icing set for at least 30 minutes before cutting the iced strawberry brownies into squares.
