Description

Learn how to make classic palmiers, also known as elephant ear cookies. These sweet puff pastry cookies are crispy, buttery, and easy to prepare with just a few ingredients. This recipe will guide you through creating delicious homemade palmiers from scratch.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, spread the granulated sugar evenly. If using cinnamon, mix it with the sugar.
  3. Place the thawed puff pastry sheet onto the sugared surface. Press down gently with your hands or a rolling pin to embed the sugar into the pastry.
  4. Fold the two longer sides of the puff pastry towards the center, meeting in the middle. Then, fold each side in half again, so the folded edges meet in the center. You should have four layers on each side.
  5. Press down lightly on the folded pastry to help it stick together.
  6. Using a sharp knife, slice the log into 1/2-inch thick cookies.
  7. Place the palmier cookies onto the prepared baking sheet, leaving about 2 inches between them.
  8. Bake for 10-15 minutes, or until golden brown and caramelized.
  9. Carefully flip the palmiers and bake for another 5-10 minutes, until the other side is also golden and crisp.
  10. Remove from the oven and let the palmiers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Ensure your puff pastry is fully thawed but still cold for best results.
  • Adjust the amount of sugar to your preference.
  • These palmier cookies are best enjoyed fresh.
  • For extra flavor, you can add a pinch of salt to the sugar mixture.
  • Experiment with different spices like cardamom or nutmeg.
