Savory Soy Sauce Chicken Recipe for Ultimate Comfort Food

- 6 pieces chicken thighs
- 0.5 tablespoon cooking oil
- 3 stalks scallions
- 1 thumb-sized piece ginger
- 3 pieces star anise
- 2 pieces bay leaves
- 1 cup light soy sauce
- 2 tablespoons dark soy sauce
- 2 tablespoons Shaoxing rice wine
- 2 tablespoons dark brown sugar
- 2 cups water
- 0.5 tablespoon cornstarch
Instructions
- In a wok or pot, add cooking oil, scallions, ginger, star anise, and bay leaves. Fry over low heat until fragrant, for about 3-4 minutes.
- Pour in the light soy sauce, dark soy sauce, Shaoxing rice wine, dark brown sugar, and water. Bring to a vigorous boil for 1-2 minutes.
- Gently slide the chicken thighs into the pot, skin side down. Adjust the water to cover most parts of the chicken if needed.
- Once boiling, reduce the heat to a gentle simmer. Cover and let it simmer for 35 minutes.
- After 35 minutes, carefully flip the chicken thighs and cook for an additional 10 minutes.
- Remove the chicken from the pot. Once cool, take off the bones and slice into bite-sized pieces.
- Retain about 120ml (1/2 cup) of the broth. Heat it back up and add the cornstarch mixture, stirring until thickened.
- Pour the sauce over the sliced chicken or serve it in a bowl on the side for dipping.
